Today is National Microwave Oven Day, a day honoring microwave meals and quick dinners, especially when we are smack dab in between the two largest cooking holidays of the year!  

I had the change to chat with my friends at WKYT this morning to chat about why we celebrate the holidays. So How did National Oven Day come about?

  • Quite by accident, self-taught American engineer Percy Spencer discovered a way to heat food safely with microwaves. While working with an active radar in 1945, he noticed a candy bar in his pocket was melting. The rest is history!
  • The first microwave was over 6 feet tall and weighed over 700 pounds.
  • My go-to is a Raybern’s sandwich – you go from freezer to microwave to table in 90 seconds! Plus, my kids love them!

If you’re looking for a delicious Christmas inspired microwavable dessert… the following is oh, so delicious!


Microwave Chocolate Mug Cake (pair with your Raybern’s sandwich)

Prep time: 5 minutes
Cook time: 1 minutes
Total: 6 minutes
Ingredients:
  • ¼ cup all-purpose flour
  • ¼ cup white sugar
  • 2 tablespoons unsweetened cocoa powder
  • ⅛ teaspoon baking soda
  • ⅛ teaspoon salt
  • 3 tablespoons milk
  • 2 tablespoons canola oil
  • 1 tablespoon water
  • ¼ teaspoon vanilla extract
  • Crushed up peppermint, chocolate chips, sprinkle powdered sugar on the top!
Directions:
  1. Mix flour, sugar, cocoa powder, baking soda, and salt in a large microwave-safe mug; stir in milk, canola oil, water, and vanilla extract.
  2. Cook in microwave until cake is done in the middle, about 1 minute.
  3. Add toppings and enjoy!
