Pineapple Crockpot Chicken

I’m all about a good crockpot recipe. Especially during the week when we have 7,382 kids activities to rush off to.

Last night, I enlisted “Betty the Crockpot” to help with dinner. I had some canned pineapple in the pantry and wanted to incorporate it in a recipe and man! This one was a smash…. literally! 🍍

Pineapple Crockpot Chicken

Ingredients

  • 1 lb chicken
  • 1 can pineapple with juice 
  • 1/2 yellow onion, whole
  • 2 tablespoons sesame oil
  • 3 tablespoons honey
  • 1/4 cup soy sauce
  • 1/2 cup brown sugar
  • 1/2 tablespoon ginger 
  • 1 tablespoon minced garlic
  • 1 tablespoon cornstarch

Directions

  1. Put pineapple with juice in bottom of crockpot and add chicken
  2. In a medium mixing bowl add the other ingredients together and then pour over chicken
  3. Cook in crockpot on high for 3 hours or low for 5-6
  4. During the last 30 minutes of cooking, add cornstarch and chicken broth if too dried out
  5. Serve over egg noodles or rice
