This is the most tropical cocktail you’ll have around the holidays. If you’re dreaming of sunshine during the cold winter air…this is a drink for you!
I must warn you, this drink is pretty heavy on the coconut and rum flavoring. So if you’re looking for something grittier, this might not be the move for you. Still, I love this cocktail. Not only does it have a tropical vibe, but it’s also so to look at pretty. The red pomegranate garnish contrasts so beautifully with the white creamy texture of this drink.
Serve this up for a holiday happy hour or as a night cap.
Mele Kalikimaka Mojito
Serves: 1 drink
INGREDIENTS:
- Lime Juice (1 lime)
- 8 Mint leaves
- 1 tablespoon sugar (can be omitted for a less sweet version)
- 1 shot white rum
- 1 tablespoon coconut rum
- 1/4 cup canned coconut milk
- sparkling water to top
- pomegranate for garnish
INSTRUCTIONS:
- In a glass, muddle the lime juice, sugar and mint leaves.
- Fill the glass half way with ice.
- In a blender, combine the sugar, white rum, coconut rum, and coconut milk until smooth.
- Pour over the ice.
- Top with sparkling water, mint and pomegranate.
