Christmas Crockpot Mashed Potatoes

We are in full blown Christmas spirit in the Ireland home. I’m sitting here watching Home Alone with the boys as I type this.

I missed writing a big Thanksgiving blog post, and I apologize for that. I’ve been putting a lot of effort into YouTube lately… which I’m finding is a lot of fun. That doesn’t mean I haven’t been super busy in my chaotic kitchen, I just haven’t taken the time to type it all out.

So let’s chat holiday recipes…the best holiday recipes are the ones that bring comfort and tradition to the table without all of the stress. Easier said than done.

From roasting a turkey to creamy, caramelized onion mashed potatoes these classics never fail to impress when I entertain.

Here is the mashed potatoes I made for Thanksgiving.

CREAMY CROCKPOT MASHED POTATOES W/ CARAMELIZED ONIONS

Ingredients

• 5 pounds Russet potatoes, washed and peeled
• 2 cups water
• 1 tablespoon minced garlic
• 2 teaspoons kosher salt
• 1 stick butter
• 1 yellow onions very thinly sliced
• 1/4 cup dry white wine
• 1 tablespoon fresh thyme
• 1/2 cup sour cream
• 1 cup heavy whipping cream
• 2 cups shredded gruyere cheese
• salt and pepper to taste

Instructions

Crockpot

1. In the bowl of your crockpot, combine the potatoes, water, garlic, and salt.

2. Cover and cook on high for 4 hours until the potatoes soft.

3. Drain the potatoes, then mash them in the crockpot

4. To caramelize the onions, melt 5 tablespoons of butter and onions in a large skillet then add wine, lastly add more butter and thyme.

5. Mix sour cream and cream and sour cream with potatoes and stir the onions in with the butter and cheese, cover, and cook until the cheese is melted.

*if the potatoes are still lumpy keep mixing and adding cream until it comes to the desired texture.*
