Easy Tortilla Soup

SPOILER — this soup is addictive! If you bring it to a party or serve it at your next gathering, it will be wiped clean — no cap. Be sure to double the recipe, trust me.

If you’re an Ohioan, you may remember Max & Erma’s Famous Tortilla Soup… this is the exact copycat. If you’ve never had it, consider yourself fortunate to now have this recipe 🔥

BEST TORTILLA SOUP EVER

Ingredients:

1/4 cup butter
1/4 cup all-purpose flour
3 cups chicken broth
1 cup milk
8 oz. Velveeta cheese – cubed
10 oz. can Ro*tel, drained a little
2 cups rotisserie chicken, shredded
1 tsp. cumin
1 tsp. chili powder
salt and pepper – to taste
Colby Jack or Mexican Blend Cheese for topping

Instructions:

  1. In a cooking pot, melt butter over medium heat.
  2. Stir in flour and cook, stirring often, for 3 minutes.
  3. Slowly whisk in chicken broth then milk
  4. Stir in Velveeta cubes and stir until melted.
  5. Stir in Ro*Tel, chicken, and spices.
  6. Allow to heat until melted, about 10 minutes and serve hot!
  7. *** IMPORTANT! Fry up some tortilla strips with canola or vegetable oil for toppings. (make a ton of these, the kids will love them) Top the soup with additional Colby Jack cheese OR Mexican blend cheese
