BEST TORTILLA SOUP EVER
Ingredients:
1/4 cup butter
1/4 cup all-purpose flour
3 cups chicken broth
1 cup milk
8 oz. Velveeta cheese – cubed
10 oz. can Ro*tel, drained a little
2 cups rotisserie chicken, shredded
1 tsp. cumin
1 tsp. chili powder
salt and pepper – to taste
Colby Jack or Mexican Blend Cheese for topping
Instructions:
- In a cooking pot, melt butter over medium heat.
- Stir in flour and cook, stirring often, for 3 minutes.
- Slowly whisk in chicken broth then milk
- Stir in Velveeta cubes and stir until melted.
- Stir in Ro*Tel, chicken, and spices.
- Allow to heat until melted, about 10 minutes and serve hot!
- *** IMPORTANT! Fry up some tortilla strips with canola or vegetable oil for toppings. (make a ton of these, the kids will love them) Top the soup with additional Colby Jack cheese OR Mexican blend cheese
