Crockpot General Tso’s Chicken

I wanted to use my crockpot last week to finish off some chicken we had stored in the fridge, but was also really craving Chinese cuisine.

After a quick Pinterest search, I stumbled upon a General Tso’s recipe. I made a few tweaks and added my own adjustments. This recipe was sooo easy, quick and delicious. I even had some leftovers for the next day with steamed rice.

Serve with white rice, with edamame or other veggies.

*Note: this recipe is best when chicken is browned first on a skillet but not cooked all the way through. This chicken only takes about 3 hours to cook on high in the crockpot.

Crockpot General Tso’s Chicken

Ingredients

  • 4 boneless skinless chicken breasts cut into one inch cubes
  • 1/4 cup cornstarch
  • 1 tablespoon vegetable oil
  • 1/2 cup hoisin sauce
  • 3 tablespoons soy sauce
  • 1/2 cup brown sugar
  • 1 tablespoon minced garlic
  • 3 Tablespoons rice wine vinegar
  • 2 teaspoon sesame oil
  • 1/4 tsp ginger

Directions

  1. In a mixing bowl toss chicken and cornstarch until completely covered.
  2. Cook chicken on skillet until lightly brown but not cooked all the way through.
  3. Put chicken in crockpot.
  4. n a small mixing bowl whisk together hoisin sauce, soy sauce, brown sugar, garlic, rice wine vinegar, sesame oil, ginger and pour on top of chicken.
  5. Cook on high for 3-4 hours and serve over rice with sesame seeds and green onions (optional).
